Vermentino Bianco – I.G.T. Toscana
Vermentino is the traditional grape of the Tyrrhenian coast and has always been grown in the Apuan hills.
In our vineyards we have different 11 clones, planted in three separate areas, each witha different aspect and soil (layers of 40-80 cm). These permutations allow us to produce a consistently high quality each year.
The winemaking is straightforward, and the wine is kept in barrel for twelve months to complete the maturation process.
A period of bottle ageing gives a white wine with body and the aroma of ripe, fruit, with the characteristic finish of bitter almonds, wich goes so well with pecorino and mountain cheeses and the rich flavours of our cuisine.
This year we paired it with a cheese made in Lucca, in Tuscany, Scoppolato di Pedona.
Winemaking
A short period of skin maceration; a slow fermentation and ageing in barrel for 24 months. ;aturation in bottles for 12 months.
Organoleptic sensations
Colour: pale yellow.
Bouquet: a intense nose with the aroma of white flowers, such as hawthorn. Hints of vanilla and of coconut.
Palate: slightly mineral notes, with good body and a long finish.
Notes: the perfect balance between the nose and palate make for an elegant wine which will accompany both fish and meat, as a starter or a main course.
Recommended with: sea food of any kind; cold meat and salami; mild cheeses.
Particularly good with special cheese from Lucca, Scoppolato di Pedona.
Perfect as an aperitif.
